PEM2i: a Center of Microbiology Excellence being created in Aurillac (Cantal). This center aims to be a place of shared resources to meet training and experimentation needs, both for all the partners involved but also for all requesting structures. It will thus constitute a reference for all needs concerning industrial microbiology. More broadly, the PEM2i is part of the national dynamic of building sovereignty and a transition in the fields of agri-food, health and agronomy, as evidenced by the national programs "great challenge ferments of the future" ( GDFF) (with which the PEM2i interacts) and the “priority research programs and equipment” (PEPR) and “food systems, microbiome and health” (SAMS), as well as international with the European Cost Pimento action (European Cooperation in science and technology Promoting Innovation of ferMENTed foods).
